Our melon smash recipe makes an interesting, light tasting, refreshing desert. It can be made with any melon – the sweeter the better. We used one of our home grown musk melons.

The main ingredients are melon and mint, enhanced by lemon juice, olive oil, and a little salt.
Ingredients – Melon Smash
- One large melon
- Ten mint leaves
- Two desert spoons of olive oil
- Juice of one lemon
- Sprinkling of slat
The recipe will make four to six refreshing portions (depending upon the size of the melon). Total preparation time: ten minutes.
Melon Smash Recipe
The recipe involves no cooking. After preparing all the ingredients, place them all together in a chopper or food processor and blitz. The mixture is best chilled before serving.
Start with preparing the melons. The soft flesh is required, so the skin and pips need to be removed. An easy way of doing this is to chop the melon into wedges and remove the pips. Using a sharp knife, slice away the soft flesh from the skin and harder flesh at the edge of the melon.
The mint should be washed and chopped, using the leaves rather than any chewy stalks. If you are fond of mint, feel free to add more after tasting the mixture. Wash a few more leaves if you would like to add a garnish.
Place the chopped melon and mint in a blender or chopper, and add the remaining ingredients: the juice of a lemon, olive oil, and a dash of salt.
Feel free to add more of any ingredients after tasting, remembering that chilling the desert will reduce the impact of the flavours. Garnish with mint.
